Chicken ala King

Definitely a comfort dish..... When I just want to have a that warm feeling of home and something saucy and delish, this is my go to meal....Enjoy 😊 Ingredients ½ onion chopped finely 2 chicken breasted diced into cubes 60 ml baby peas half a punnet mushrooms sliced 10 ml olive oil 1 tsp cumin powder ½ tsp curry powder 1 tsp dried mixed herbs 1 tsp salt  ½ tsp pepper Fresh coriander for garnish Sauce 60 ml butter 60 ml flour 200 ml milk (can add more if needed) salt and pepper to taste Method 1. Add the oil to a medium sized pot on medium heat and add the onions, saute these until translucent in color.  2. Add the cumin and curry powder as the mixed herbs to the onions and stir. 3. Allow the spice to cook for a minute. 4. Add the chicken cubes and stir until coated with the spices. 5. Once the chicken starts to cook it releases it natural juices and flavours 6. Creamy Spinach

Creamy Spinach Ingredients Sauce 50 g   Butter ¼         Onion chopped fine ½ tsp  Garlic chopped/crushed 1 cup  Milk 60 ml Full Cream (optionally use extra milk for healthier option 😉) 40 ml Flour ½ tsp Pepper ½ tsp Salt ½ tsp Cayenne Pepper Spinach 200gr Baby Spinach ¼         Onion chopped fine 1 tsp Cumin Powder ½ tsp Pepper ¼  tsp Salt ½ tsp Cayenne Pepper 1 tblsp Parmasen cheese 4 sprigs chopped chives Method Sauce 1. Melt butter in a medium sauce pan on medium heat. 2. Add onions and garlic and allow to cook until translucent. 3. Add flour and mix to form a roux. 4. Add milk and cream and whisk until the sauce is smooth and allow to thicken 5. Add pepper, salt and cayenne pepper. Spinach 1. In a pan, add oil on a medium heat 2. Add onions and allow to cook until translucent. 3. Add cumin powder and stir. 4. Add spinach in small bunches and allow to wilt while adding more as it starts to wilt. 5. Add salt, pepper and cayenne pepper 6. Add cooked spinach to the sauce and fold in.

Choc Peanut Butter Smoothie 😍

 Ok guys this is my ultimate favourite smoothie when I need a cheat 😄😉 Choc Peanut Butter Smoothie  1 frozen sliced banana 1 tbl Peanut butter 2 tsp cocoa powder 1 tsp maca powder (optional) 4tbl plain yoghurt 3tbl almond milk 2 tsp honey (optional) 2 tsp granola for the top Put all ingredients in a blender and blend until smooth and serve chilled with sprinkled granola on top if you like 👌🏼 😉

Green Genie Smoothie 💚

In my pursuit of living a more healthier lifestyle I am trying different variations of smoothies and thought I would share them 😊 ~  Neru❣ Green Genie Smoothie 1 avocado peeled and cubed 1 sliced banana (frozen is best) 10 baby spinach leaves 4tbl plain yoghurt 3tbl almond milk 1 tsp maca powder 2 tsp honey Put all ingredients in a blender and blend until smooth and creamy. Serve chilled with a mint leaf for garnish  😉👌

Thai chicken curry

I have always thought it would be so cool to cook with coconut milk, I never quite got around to it though, well better late than never. This is my take on a Thai chicken curry, my very first attempt. The versatility of the recipe a part from it being healthy, is that you can substitute the chicken with a plant based protein for a vegan option. Curried Lamb Samp and Beans

 A old favorite that never grows old in my home, nothing says home food like samp and beans 😃💛💛💛 Curried Lamb Samp and Beans Ingredients 1 can samp and beans 3 medium sized cutlets lamb 2 medium potatoes ½ onion chopped finely 1 tomato cut finely 4 sprigs fresh coriander 1 green chili 20 ml olive oil 5 curry leaves (I tend to use more, but its optional) 4 - 5 cinnamon sticks 1 star aniseed 2 dry bay leaves  2 pods cardamom ½ tsp turmeric powder 1 tsp chili powder 1 tsp curry powder 1 tsp cumin powder 1 tsp coriander powder 2 tsp salt Method 1. Add oil to a medium sized pot, on medium heat. 2. Add the curry leaves, cinnamon sticks, star aniseed, bay leaves and cardamon pods and the green chili and allow to cook for about 2-3 mins. 2.
