Saucy Tuna Spaghetti

I am an absolute pasta lover in all shapes and forms and therefore I love to experiment with different variations of pasta dishes. I made this one recently and it just made me feel like home, warm and cosy, just the right thing for winter, to have for supper while watching series. I hope you enjoy!!


Saucy Tuna Spaghetti

Ingredients (Spaghetti)

¼ Packet of spaghetti (125 g)

5 mil olive oil (normal cooking oil is fine)

1 tsp salt

2 cups boiling water (Cover spaghetti)

Method

1.      Add spaghetti, water, oil and salt to a pot and stir

2.      Allow to cook until al dente (approx. 10 mins)

3.      Strain in a colander and run cold water through the pasta to stop the cooking process.

 

Ingredients (Tuna)

1 can of Tuna in water (strained)

10mil oil

2-3 curry leaves(optional)

¼ onion chopped fine

30 ml onion pureed (optional)

1 green chilli slit down the center

1 tsp Coriander powder

1 tsp Cumin powder

1 ½ tsp chili powder

Salt to taste


Method

1.      Add oil to a pan under medium heat, add curry leaves for 2 mins and then add the onions chopped and pureed as well as the green chili, allow to cook until the onions are translucent

2.      Add the coriander, cumin and chili powder as well as the salt and stir.

3.      Lastly add the Tuna and stir until your tuna is coated with the spices.

4.      Optional – Add 50 ml warm water and allow to cook for about 5 mins.

 

Ingredients (Sauce)

60 gr butter (Rama margarine)

2 ½  tblsp flour

50 ml pureed onion or ¼ finely chopped onion

1 ½ cups milk

50 ml Full Cream

½ tsp Salt – can add to taste

½ tsp Pepper

60 ml grated parmesan cheese

1 clove chopped garlic (optional)

½ tsp nutmeg (optional)

Two sprigs of fresh thyme

 

Method

1.      Add the butter to a medium to low heat sauce pan.

2.      Once the butter has melted, you can add the onions and garlic and allow to cook until onions are translucent

3.      Add you flour to make a roux. Reduce heat to low

4.      Add your milk and cream to the mix and whisk it to remove any lumps. Continue to stir on a reduced to avoid the mixture thickening and catching at the bottom.

5.      Add the salt, pepper, nutmeg and thyme and stir

6.      Add the parmesan to the sauce and stir.


        Combining all components

1.      Add the cooked Tuna to the sauce and mix.

2.      Add the Spaghetti to the sauce and toss it in until its fully coated

3.      You can serve like that garnished with chives or fresh coriander

4.      Alternatively, you can grate extra parmesan on top and serve 😊

Cheese “Simba” Chip Biscuits

These Cheese biscuits are really easy and quick to make and are delightful for tea time and when guests are coming over. They can be pretty addictive especially when you love cheese 😉   Cheese “Simba” Chip Biscuits Ingredients 100 grams very soft butter 250 ml Flour 1 Big packet (150 grams) of Simba cheese and onion chips crushed (Simba chips is best but you can use other brands 😊) 200 grams Cheddar Cheese, grated ½   tsp Cayenne pepper (optional) Method 1. Thai chicken curry

I have always thought it would be so cool to cook with coconut milk, I never quite got around to it though, well better late than never. This is my take on a Thai chicken curry, my very first attempt. The versatility of the recipe a part from it being healthy, is that you can substitute the chicken with a plant based protein for a vegan option.
