Quick Quesidillas

 This recipe was while looking for something quick and easy to make, I decided to just add what I had in the refrigerator and whala here you go πŸ˜„  

This is one that can go with just about any filling veg or non veg, and cheese just makes everything yummy πŸ˜‰ Enjoy!!!


Quick Quesadillas

Ingredients
2 brown tortillas
½ small chopped tomato
5 mushrooms sliced
Spinach leaves to cover the surface area
100 gr cheese grated for inside and on top
Hot sauce for base
1 tsp mixed herbs
1/2 tsp cayenne pepper
salt and pepper to taste
Smoked chicken slices(optional)


Method
1. Place one tortilla on a greased baking tray (normally use spray and cook for the tray)
2. Spread the hot sauce on the tortilla to cover the surface as shown below.

3. Layer the smoked chicken at the bottom, this is optional.
4. Layer the sliced mushrooms to cover the base.
5. Add the chopped tomatoes.
6.Add the spinach on top to cover the base.
7. Add half the cheese on top and sprinkle with salt, pepper and mixed herbs.
8. Cover this with the other tortilla by placing it on top and then add the rest of the cheese, sprinkle with mixed herbs and cayenne pepper.
9. Place in an oven at 200 degrees Celsius and bake for about 10 minutes or until cheese melts and turns golden brown.

Cheese “Simba” Chip Biscuits

These Cheese biscuits are really easy and quick to make and are delightful for tea time and when guests are coming over. They can be pretty addictive especially when you love cheese πŸ˜‰   Cheese “Simba” Chip Biscuits Ingredients 100 grams very soft butter 250 ml Flour 1 Big packet (150 grams) of Simba cheese and onion chips crushed (Simba chips is best but you can use other brands 😊) 200 grams Cheddar Cheese, grated ½   tsp Cayenne pepper (optional) Method 1. Thai chicken curry

I have always thought it would be so cool to cook with coconut milk, I never quite got around to it though, well better late than never. This is my take on a Thai chicken curry, my very first attempt. The versatility of the recipe a part from it being healthy, is that you can substitute the chicken with a plant based protein for a vegan option.
