This is such a lovely recipe for the week when you need something that you can make to go with any other dish and is healthy and nutritious π
Savory Brown Rice with Carrots and MushroomsIngredients
10-15 ml olive oil
5-6 curry leaves
½ onion chopped finely
2 carrots grated
2 cups cooked brown rice
½ punnet mushrooms sliced
Spices
1 tsp cumin
1 tsp curry
½ tsp salt (to taste)
2 whole cinnamon sticks
1 dry red chili (I normally break it in half but its not necessary)
½ tsp mustard seeds
Method
1. Add olive oil to a medium sized pan on medium heat. Add the curry leaves and mustard seeds, dry chili and cinnamon sticks and let that cook until mustard seeds start to pop, be careful, you can use a pot lid to cover the pan if need be π 2. Add the onions and cook until it is translucent
