Lamb and veg stew

This hearty lamb stew is my version of my ma's stew where I use sweet potato for a healthier option๐Ÿ˜‰ Its one of my favourites for those cold winter days, when you missing home and need something to warm you up in more ways than one  ❤

 Ingredients

500 grams cubed lamb or stewing lamb cuts

1 carrot cubed (1cm x1cm)

2 sweet potato cubed (3cm x 3 cm)

½ onion chopped finely

1/2 cup baby peas

1/2 cup sweet corn

20 ml coconut oil

500 ml boiling water

Spices

1 tsp cumin powder

1 tsp coriander powder

1tsp curry powder (optional)

1tsp dried mixed herbs

1tsp dried thyme

2 tsp salt (you can add to taste)

1 tsp black pepper

1 packet mixed veg soup


 Method

1. Add coconut oil to a medium sized pot and allow to heat up, add the lamb pieces to seal in the flavor.

2. Once sealed then remove the lamb from the pot and allow to stand, leave the oil and remaining juices in the pot.

3. Add the onions to the pot and allow to cook until the onions turn translucent.  

4. Add the following spices and herbs and stir in: cumin, coriander and curry powder, thyme, salt and black.

5. Add the cubed sweet potato and stir until coated with the spices.

6. Add the lamb that has been resting and rub the mixed herbs into the pot and stir.

7. Add 250 ml boiling water to the pot and allow to boil

8.Add the peas and sweetcorn and allow to boil.

9. Make the packet of mixed veg soup with the 250 ml boiling water in a mug and add this to the pot and allow to boil for about 10 mins, the stew will thicken.



Serve with sliced French loaf drizzled with olive oil and baked in the oven until crisp ๐Ÿ‘Œ๐Ÿ˜ƒ

Cheese “Simba” Chip Biscuits

These Cheese biscuits are really easy and quick to make and are delightful for tea time and when guests are coming over. They can be pretty addictive especially when you love cheese ๐Ÿ˜‰   Cheese “Simba” Chip Biscuits Ingredients 100 grams very soft butter 250 ml Flour 1 Big packet (150 grams) of Simba cheese and onion chips crushed (Simba chips is best but you can use other brands ๐Ÿ˜Š) 200 grams Cheddar Cheese, grated ½   tsp Cayenne pepper (optional) Method 1. Thai chicken curry

I have always thought it would be so cool to cook with coconut milk, I never quite got around to it though, well better late than never. This is my take on a Thai chicken curry, my very first attempt. The versatility of the recipe a part from it being healthy, is that you can substitute the chicken with a plant based protein for a vegan option.
